Chicken and Sweetcorn Sandwich

A typical chicken and sweetcorn sandwich consists of a drained can of sweet corn, with quality chicken breast fillet chunks cut into small pieces.

Try to go for an organic sweetcorn like Green Giant, but other names are suitable, just make sure they are drained well from their salty water. But most importantly, the chicken must be cut from the breast and be of good quality, or the sandwich is ruined. Then simply smother this all in mayonnaise and throw into a medium cut granary bread, or white if you prefer.

  • 2 slices medium cut granary bread
  • 2 tbsp. canned sweetcorn, drained
  • 32g ready cooked chicken breast fillets, sliced
  • 1 tbsp. Hellmann’s Real Mayonnaise, large heap


  • Take the large chunks of chicken out of the packet and slice them into small 1cm cubes, or squares before throwing them into a mixing bowl
  • Then add 1 large tablespoon of mayonnaise into the mixing bowl
  • Now take 2 tablespoons of sweetcorn out of the can – insuring they are well drained – before adding to the mixing bowl as well
  • Mix the whole thing thoroughly insuring all the ingredients is smothered in mayo to complete your chicken and sweetcorn sandwich filling
  • If you like, cover the bowl with cling film and place in the fridge for an hour for a better tasting mixture
  • Finally, use all the mixture and spread on the bottom slice of bread before cutting diagonally and serve
