Portobello Mushroom Burger Recipe

This flavorful large Portobello mushroom burger is a wonderful alternative to the traditional beef burger but filled with lots of flavor and texture, and suitable for vegetarians.

As seen on Niger Slater's Real Food, Nigella Lawson cooks up this incredibly delicious recipe in a short time with very little ingredients needed.

INGREDIENTS

4 Focaccia bread buns
4 Portobello mushrooms
Garlic butter
Parsley
Dijon mustard
Iceberg lettuce
1 Scallion

INSTRUCTIONS

Start by adding olive oil to the bottom of an oven dish and place four Portobello mushrooms directly on to the olive oil

Spoon a generous amount of garlic butter on top of all four mushrooms. Two table-spoons will do the trick. Add a bunch of freshly chopped parsley and mix thoroughly in the garlic butter if your garlic butter is without the parsley

Add your oven dish to the center of a pre-heated oven at gas-mark 5 for 20 minutes and when the garlic butter is completely melted through the mushroom. Remove oven dish and leave to stand on the side

Cut open four Focaccia bread buns in half down the side just like you would a burger bun

Place each half of the Focaccia bread in the oven dish and allow it to absorb some of the hot garlic butter left over for added moisture to the bread

Spread a tablespoon of Dijon mustard over the bottom half of each burger

Add a Portobello mushroom to each burger and garnish with a few shredded Iceberg lettuce and a small amount of chopped scallion

Eat the Portobello mushroom burger right away well its still hot

TIPS & ADVICE

If you find Focaccia bread to difficult to come by this recipe works great with a simple floury bun or bap that is widely available.

Also most bought garlic butter is plain so you'll need to add your own parsley for added flavor.

SERVING SUGGESTIONS

Serve the Portobello mushroom burger like you would with a beef burger. Try a small plate of fries with a dollop of tomato ketchup.
